Can-do classic: Sweet or savoury protein loaf

Really useful gluten-free standby from our recipe files. Toast and try it sweet with butter and jam, savoury with bacon and maple syrup or as a side for soup

MAKES 1 LARGE LOAF

DRY INGREDIENTS

200g ground almonds

40g coconut flour

1½ tsp baking powder sifted

⅓ tsp bicarbonate of soda sifted

large pinch of fine sea salt

WET INGREDIENTS

7 large eggs

40g coconut oil melted

1 generous tbsp runny honey

1½ tbsp cider vinegar

TO BAKE

melted coconut oil for the tin

golden linseed for dusting (optional)

1 Preheat the oven to 190C/170C fan/gas 5. Select a large loaf tin (about 22cm long, 1.2 litre capacity or equivalent).
